Patitas de cerdo con habichuelas blancas Ésta receta no es ni más ni menos que una variante de los famosos garbanzos con callos, claro que sin callos y sin garbanzos. El resultado espectacular, como podéis ver. INGREDIENTES: 4 Manitas de cerdo 1/2 kg. de judías blancas cocidas 1 Hueso de jamón Tomate frito natural (de mi conserva) Pimiento verde Pimiento rojo Cebolla 2 Lonchas de pancenta 1 Chorizo curado 2 Ajos Cayena Aceite Sal PREPARACIÓN: Empezaremos cociendo las manitas en agua con sal, dos hojas de laurel y un hueso de jamón Laurel. En la olla rápida en 15' estarán listas. Haremos el sofrito: En una sartén o en cazuela pondremos 3 cucharadas de aceite y pocharemos el ajo laminado, la cebolla, el pimiento rojo y el verde. Añadimos el chorizo y la pancenta. Cuando esté pochado añadiremos el tomate frito y la cayena. Escurrimos las manitas y las añadimos al sofrito. Ponemos ahora en la olla las judías blancas. Rectificamos de sal y dejamos a fuego suave unos 10 minutos. Servimos. Culebra Island giant anole The Culebra Island giant anole (Anolis roosevelti ) is an extremely rare or possibly extinct species of lizard of the genus Anolis in the family Dactyloidae. The Culebra Island giant anole was first described in 1931 by American zoologist Chapman Grant, grandson of U.S. PresidentGrant. It is named in honor of Theodore Roosevelt, Jr., who was the governor of Puerto Rico at that time. It was initially described as Anolis roosevelti but some have suggested it should be transferred into the genus Xiphosurus in 2012. However, this new classification system is highly controversial because it creates polyphyletic groups in the genus Anolis. Therefore, the new classification system of Anolis has not been universally accepted. Anolis roosevelti is endemic to Culebra Island in Puerto Rico. A. roosevelti can reach a snout-to-vent length (SVL) of 160 mm (6.3 in). The color of the body is brown-grey, while the tail has a yellow-brown hue and the abdomen is whitish. The throat fan varies from gray on the upperparts to yellow on the underparts, and the eyelids are yellow. A further feature are two long drawn-out lines on both sides of the body; one starts at the ear, the other at the shoulder. A. roosevelti lives in forested zones on the slopes of Mt. Resaca. Though A. roosevelti was only observed again in 1932 after its discovery, there have been unconfirmed sightings since 1973 (the last one in 1978). Some experts believe that it might still exist. It preferred a habitat with gumbo-limbo and ficus trees because it fed from the fruits of the trees. Due to human activities the habitat was almost destroyed; only a few specimens of the Culebra Giant Anole can be seen in museums. Dulce de Leche Bars 🇵🇷 I love Dulce de Leche, used to eat it as a child all the time, my mother made it from scratch. This is a simple recipe that I have come up with. Yes, it's very sweet, but you only have to eat a little! So easy, it's absolutely sinful. 1 large ready to use graham cracker crumb pie crust (can select regular with cinnamon or even chocolate crumb) For the filling you will need 2 8-ounce packages cream cheese, at room temperature, 1 cup suga,r 2 large eggs, ½ cup ready made Dulce de Leche, and 1 tsp vanilla extract Blend cream cheese and sugar in processor until smooth and creamy, for about 1 minute, stopping occasionally to scrape down sides of bowl. Add eggs 1 at a time, processing 3 to 5 seconds to blend between additions. Add dulce de leche and vanilla; process until blended, about 10 seconds. Spread batter evenly over crust. Bake until just set in center and edges are puffed and slightly cracked, about 38 minutes. Next, swirl with additional Dulce de Leche liquid, let it cool completely and and refrigerate at least 4 hours before serving. Either cut into wedges or cut into squares. Yum! What are the characteristics of (Orisha’s) Children? This is a question that I receive quite a bit here yet it is one of most common questions asked within Santeria of those who are curious of the religion or have no clue who is they’re Orisha as of yet. Within the Yoruba belief system, everyone has a “owner of the head” or a guardian angel; this is an Orisha that is placed on your head before you are born and is one that accompanies you on the Earth on your path. - A Painting of Obatala - Within Santeria, many people like to take educated guesses on who your Orisha is though this can not be taken as fact until it is determined through a ceremony of Ifa. I myself have posted here and there on some “common” characteristics of Orisha’s children. Although there are certain traits that can be seen in an Orisha’s child, usually reflecting the Orisha themselves. For example, Obatala’s children are said to be clean and cool headed people or Oshun’s children are said to be extroverted. I have in fact seen childrent of an orisha be the complete opposite of what they’re guardian angel’s traits are :) In other words, do not be guided by what others may say is your Orisha because you are “insert trait here” for this has very little do with the fact, this is something that cannot be found out until you have done the proper ceremony. Pastelillos de Queso . . . 'volaos' 🇵🇷 Anyone can make these easy and sinfully delicious pastelillos. Now you can buy the dough ready make at most Kroeger Stores or even Walmart. Buy Goya discs in packs of 10. They must be at room temperature and you can choose to use them 'as is' or use a rolling pin to stretch them a bit. What you need are the discs, the stuffing, and oil for frying (they must be fried to taste the same). Islanders use Queso de Bola Holandes, but any cheese that melts good will do. These were stuffed with Mozzarella. They can also be stuffed with traditional Guaya paste or Guava Paste and cheese, or picadillo meat (or crab meat). Stuff them, fry them, serve warm. If you can't find Goya discs then make the dough, it's easy. Cabrito en Fricasé de Puerto Rico 🇵🇷 Ingredientes: 4 lb. cabrito tierno ½ taza jugo de naranja agria o ½ naranja, ½ limón 3 dientes de ajo 2 cda. orégano ¼ cdta. pimienta 1 ½ cdas. sal 1 cda. vinagre 1 oz. tocino "salt pork" 2 oz. jamón de cocinar 2 hojas de laurel 1 lb. cebolla ½ taza salsa de tomate 1 lata tomate al natural 12 aceitunas rellenas 2 oz. alcaparras 1 lata guisantes "petit pois" 1 taza vino seco 1 lb. papas Preparación: Machaca el ajo, orégano, pimienta, sal y vinagre en un pilón o mortero para crear un adobo. Pica la cebolla en ruedas. Limpia, pela y corta las papas en pedazos. Pica el tocino y el jamón en pedazos pequeños. Lava el cabrito y pica en pedazos de 2 pulgadas. Coloca en un recipiente con tapa, vierte el jugo de naranja para que cubra el cabrito. Coloca en el refrigerador por 2 horas. Escurre y lava bien el cabrito en agua fresca. Frota el adobo por todas las piezas del cabrito. Pon a un lado. Coloca en un caldero u olla grande a fuego moderado alto el tocino y el jamón hasta que doren. Añade las hojas de laurel, cebolla, salsa de tomate, tomates al natural con su liquido, aceitunas, alcaparras y guisantes con su líquido. Añade los pedazos de cabrito, y pon a fuego moderado alto hasta que hierva. Inmediatamente reduce a fuego moderado, tapa y cocina por 2 horas. Agrega el vino seco y las papas. Tapa y deja que hierva nuevamente por 30 minutos o hasta que la carne este completamente tierna. Destapa el caldero, prueba y ajusta la sazón. Continua cocinando hasta que la salsa espese lo necesario.
