Batata Vada (potatoe bites) A very popular snack and street food in India namely in the gujerat and Maharashtra region. Usually served between 2 soft buns called pav. And it's another family favourite. Potatoes boil and mash In a pot make a vagar of mustard seeds , curry leaves , ginger garlic paste , green chillie , lemon juice , salt and of course oil. ( splutter mustard seeds first in oil ) then mix in with potatoes. Yesterday's dinner.... I'm still continuing on the "get well better" theme. Made this really delicious and filling cauliflower and red lentil curry using fresh tumeric (that's why it's very yellow 🙄). The aubergine dish is a traditional family's recipe called 'ringan pe'lata'. You normally marinate the sliced aubergines in a masala paste along with similar slices of potato. Leave it to marinade overnight or a few hours then fry them in a little oil in batches. Once all cooked layer aubergine and potato in pan and let it heat through slowly. It's so yummy. But I didn't want to pan fry them so grilled mine over a low heat for about 40 mins (and turning over halfway). I took inspiration from @miramanek's yoghurt topping for her masala aubergines. It was really tasty with the dill but I didn't add any chilli as the kids were going to have some. It all worked well by adding a little aniseedy flavour and subtle sweetness with the pomegranates running through it. I had mine with sorgham & millet flour rotla.
